The method

Step by step

    In a medium bowl, combine the garlic, fresh red chili, cilantro root, fish sauce, soy sauce, sugar, and lime juice to create the marinade.

    Cook’s note: If you don't have cilantro root, you can use the lower stems of cilantro instead.

    Add the cleaned and scored squid to the marinade, ensuring all pieces are well coated.

    Cover the bowl and let the squid marinate in the refrigerator for at least 15 minutes, or up to 30 minutes.

    Cook’s note: Do not marinate for too long, as the acid in the lime juice can start to 'cook' the squid.
