The method

Rinse the poha gently under cold running water in a colander for about 1-2 minutes until it softens slightly. Be careful not to make it mushy. Drain thoroughly and set aside.

Heat the vegetable oil in a large pan or kadai over medium heat.

Add the peanuts to the hot oil and fry until they turn golden brown and crisp, about 2-3 minutes. Remove the peanuts with a slotted spoon and set aside.

In the same oil, add the mustard seeds and allow them to splutter.

Add the cumin seeds and curry leaves and sauté for about 30 seconds until fragrant.

Stir in the yellow onion and green chili. Cook until the onion becomes translucent, about 3-4 minutes.

Add the turmeric powder, salt, and sugar to the pan. Mix well and cook for another minute.

Gently add the rinsed poha to the pan. Mix everything carefully until the poha is evenly coated with the spices.

Keep it good
