- 1 pcsyellow onion, chopped
- 2 pcscarrot, peeled and grated
- 100 gcelery root, peeled and grated
- 2 clovegarlic, minced

- 2 tbspall-purpose flour
- 1 tspmarjoram, dried
- 0.5 tsppaprika, sweet
- 2 pcsbay leaf
- 3 pcsallspice berry
- 1 tspsalt

The method
Step by step

Rinse the beef tripe thoroughly under cold running water, then place it in a large pot and cover with fresh water.

Bring the water to a boil, then reduce the heat and simmer for 10 minutes.

Drain the tripe, discard the water, and rinse the tripe again.

Repeat steps 1-3 two more times for a total of three boils and rinses.

After the final rinse, return the tripe to a clean pot and add the beef broth, bay leaves, and allspice berries.

Bring to a boil, then reduce heat to low, cover, and simmer for at least 2 hours, or until the tripe is very tender.
