  • 550 gcooked wild rice blend, from about 1 cup/160g uncooked rice
  • 570 gfrozen chopped spinach, thawed and squeezed very dry
  • 300 gcream of celery soup, from one can
  • 1 cupsour cream
  • 1 pcsyellow onion, finely chopped
  • 85 gmonterey jack cheese, grated
  • 60 gmozzarella cheese, grated
  • 0.5 tspdried oregano
  • 0.5 tspsalt
  • 0.5 tsplemon juice
  • 0.25 tspgarlic powder
  • 0.25 tspblack pepper, freshly ground

The method

Step by step

    Preheat your oven to 175°C (350°F).

    While the oven preheats, prepare all your ingredients: ensure the spinach is thawed and thoroughly squeezed dry, the onion is chopped, and cheeses are grated.

    Cook’s note: Squeezing the spinach very well is key to preventing a watery casserole. You can use your hands or press it in a fine-mesh sieve.

    In a large mixing bowl, combine the cooked wild rice, squeezed spinach, chopped onion, Monterey Jack cheese, and mozzarella cheese.

    Add the cream of celery soup and sour cream to the bowl.

    Stir in the dried oregano, salt, lemon juice, garlic powder, and black pepper.
