Equipment

tofu press · grill or grill pan · skewers (optional) · whisk · knife · cutting board · mixing bowls

The method

Step by step

  1. 1

Press the extra firm tofu for at least 20-30 minutes to remove excess water, then cut it into 1-inch cubes.

    About 30 min

Cook’s note: Pressing the tofu helps it absorb the marinade better and achieve a firmer texture when cooked.

  2. 2

In a medium bowl, whisk together the lemon juice, olive oil, minced garlic, dried oregano, smoked paprika, salt, and black pepper to create the marinade.

    About 2 min

  3. 3

Add the cubed tofu to the marinade, ensuring all pieces are well coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor.

    About 30 min

Cook’s note: Marinating longer will enhance the flavor of the tofu.

  4. 4

While the tofu marinates, prepare the salad by combining the diced cucumber, diced tomato, thinly sliced red onion, and chopped fresh parsley in a small bowl.

    About 5 min

  5. 5

Preheat a grill or grill pan to medium-high heat.

    About 5 min

  6. 6

Thread the marinated tofu cubes onto skewers, if using. Alternatively, you can grill them directly on the grill surface.

    About 3 min

Cook’s note: If using wooden skewers, soak them in water for 30 minutes beforehand to prevent burning.

  7. 7

Grill the tofu for 3-4 minutes per side, turning occasionally, until golden brown with nice grill marks and heated through.

    About 12 min

Cook’s note: Avoid overcrowding the grill to ensure even cooking.

  8. 8

Warm the pita bread on the grill for about 30 seconds per side, or until soft and pliable.

    About 1 min

Cook’s note: A quick warm-up makes the pita easier to fold and more enjoyable.

  9. 9

Assemble the souvlaki by placing grilled tofu into each warm pita bread, topping with the fresh salad, and a dollop of vegan tzatziki, if desired.
