  • 0.5 pcsyellow onion, finely chopped
  • 1 pcsjalapeño pepper, minced, seeds removed

  • 2 tbspfresh cilantro, chopped(optional)

The method

Step by step

    Preheat your oven to 190°C (375°F).

    Heat the olive oil in a small oven-safe skillet or an 8-inch cast iron pan over medium heat.

    Cook’s note: A cast iron skillet holds heat well and can go directly from stovetop to oven.

    Add the yellow onion to the skillet and sauté for 3-5 minutes until softened and translucent.

    Stir in the jalapeño pepper and garlic, cooking for another 1-2 minutes until fragrant.

    Remove the skillet from the heat.

    Combine the shredded oaxaca cheese and monterey jack cheese in a bowl.

    Layer half of the mixed cheese over the onion and jalapeño mixture in the skillet.
