The method

Step by step

    Place the salt pork cubes in a small saucepan, cover with water, and bring to a boil. Boil for 5 minutes to remove excess salt, then drain and set aside.

    Cook’s note: This step is crucial for controlling the saltiness of the final dish, as salt pork is heavily cured.

    In a large pot or Dutch oven, combine the drained soaked beans, the boiled salt pork, chopped onion, bell pepper, celery, and minced garlic.

    Pour in the water and add the first portion of Italian seasoning, the whole hot pepper, and the bay leaf. Stir everything together.

    Cook’s note: Leaving the hot pepper whole will infuse the dish with flavor without making it overwhelmingly spicy. You can remove it at any time.

    Bring the mixture to a boil over high heat, then reduce the heat to low, cover the pot, and let it simmer gently.

    Cook for 2 to 2.5 hours, stirring occasionally, until the beans are tender and the liquid has started to thicken.
