Roz Mo'ammar (Egyptian Baked Rice with Milk)

Mise en place

Ingredients

  • 1.5 cupshort-grain rice, rinsed
  • 3 cupfull-fat milk, warm
  • 0.5 cupheavy cream
  • 4 tbspunsalted butter, divided
  • 1 tspsalt
  • 1 tspsugar

Equipment

saucepan · oven · baking dish

The method

Step by step

  1. 1

Preheat your oven to 190°C (375°F).

    About 10 min

  2. 2

Grease a 9x13 inch (or similar 2-liter capacity) baking dish with a tablespoon of butter.

    About 1 min

  3. 3

Spread the rinsed rice evenly in the prepared baking dish.

    About 1 min

  4. 4

In a saucepan, gently warm the milk, heavy cream, salt, and sugar over medium-low heat until the sugar dissolves and the mixture is warm, but not boiling.

    About 5 min

Cook’s note: Do not overheat the milk mixture; just warm enough to dissolve the sugar and help the butter melt.

  5. 5

Pour the warm milk mixture over the rice in the baking dish.

    About 1 min

  6. 6

Dot the remaining butter over the top of the rice and milk mixture.

    About 1 min

Cook’s note: The butter will melt and create a beautiful golden crust.

  7. 7

Bake for 30 minutes, or until the top is golden brown.

    About 30 min

Cook’s note: Keep an eye on the top; if it browns too quickly, you can loosely cover it with foil.

  8. 8

Reduce the oven temperature to 175°C (350°F), cover the dish tightly with foil, and bake for an additional 30 minutes, or until the rice is tender and has absorbed most of the liquid.

    About 30 min

Cook’s note: The foil traps steam, allowing the rice to cook through evenly without drying out.

  9. 9

Remove the dish from the oven and let it rest, covered, for 10 minutes before serving.

    About 10 min

Cook’s note: Resting allows the rice to fully absorb any remaining liquid and become even more tender.
