The method
Step by step
- 1
Combine the peanut butter, shallot, garlic, soy sauce, brown sugar, lime juice, warm water, and chili flakes in a bowl for the peanut sauce.
About 5 min
Cook’s note: Ensure the warm water is added gradually to help the peanut butter dissolve smoothly.
- 2
Stir the peanut sauce ingredients until well combined and smooth.
About 2 min
- 3
Take about half of the prepared peanut sauce and mix it with the chicken breast cubes and vegetable oil in a separate bowl.
About 2 min
Cook’s note: Reserve the remaining sauce for serving.
- 4
Cover the chicken mixture and refrigerate it to marinate for at least 1 hour, or preferably overnight.
About 1 hr
Cook’s note: Longer marination time results in more flavorful chicken.
- 5
Preheat your grill to medium-high heat.
About 10 min
Cook’s note: A charcoal grill will impart a more authentic smoky flavor.
- 6
Thread the marinated chicken pieces onto the soaked bamboo skewers.
About 5 min
Cook’s note: Don't pack the chicken too tightly, allow space for even cooking.
- 7
Grill the chicken skewers for 10-15 minutes, turning occasionally, until the chicken is cooked through and has a nice char.
About 15 min
Cook’s note: Baste with a little extra peanut sauce during the last few minutes of grilling for added flavor and moisture.
- 8
Remove the sate ayam from the grill and let them rest for a few minutes.
About 3 min
- 9
Serve the sate ayam hot with the reserved peanut sauce and lime wedges for squeezing.
