  • 1 tsptamarind paste

  • 0.5 cuppeanut butter, smooth
  • 0.5 cupcoconut milk
  • 1 tbspsoy sauce
  • 1 tbsplime juice
  • 1 tspbrown sugar
  • 1 clovegarlic, minced
  • 0.25 tspchili flakes(optional)
  • 0.25 cupwater

The method

Step by step

    Combine the chicken pieces with soy sauce, dark soy sauce, tamarind paste, brown sugar, minced garlic, chopped shallot, grated ginger, coriander powder, and cumin powder in a large bowl. Mix well to ensure all chicken pieces are coated.

    Cover the bowl and refrigerate the chicken mixture for at least 1 hour, or preferably longer, to allow the flavors to meld.

    Cook’s note: Marinating overnight will result in more tender and flavorful chicken.

    While the chicken marinates, prepare the peanut sauce. In a small saucepan, combine peanut butter, coconut milk, soy sauce, lime juice, brown sugar, minced garlic, chili flakes (if using), and water.

    Heat the peanut sauce mixture over medium-low heat, stirring constantly, until it thickens slightly and is smooth. Remove from heat and set aside.

    Cook’s note: Add a little more water if the sauce is too thick for your preference.

    If using wooden skewers, soak them in water for at least 30 minutes to prevent burning during grilling.

    Thread the marinated chicken pieces onto the skewers, ensuring they are not packed too tightly.

    Preheat your grill to medium-high heat.

    Grill the chicken skewers for 3-4 minutes per side, or until the chicken is cooked through and has nice char marks.
