The method

In a medium saucepan, combine the evaporated milk, whole milk, lemon zest, salt, and the cinnamon stick.

Place the saucepan over medium heat and bring the mixture to a gentle simmer, watching for small bubbles to form around the edge.

While the milk is heating, whisk the eggs, granulated sugar, and cornstarch together in a separate bowl until smooth and pale.

Whisk the sherry for the custard into the egg mixture until fully combined.

Once the milk is simmering, remove it from the heat. Very slowly, pour about half of the hot milk into the egg mixture while whisking constantly.

Cook’s note: This process, called tempering, gently raises the temperature of the eggs without scrambling them.

Pour the tempered egg mixture back into the saucepan with the remaining hot milk.

Return the saucepan to low heat and cook, stirring constantly with a spatula or wooden spoon, for about 5-7 minutes until the custard thickens enough to coat the back of the spoon.

Cook’s note: Be sure to scrape the bottom of the pan to prevent the custard from sticking or burning.

Remove the custard from the heat and pour it through a fine-mesh sieve into a clean bowl or jug to remove the cinnamon stick and lemon zest.

Divide the custard evenly among four small serving dishes or ramekins.

Allow the custards to cool at room temperature for about 20 minutes before covering and transferring to the refrigerator to chill for at least 2 hours, or until fully set.

Cook’s note: Placing a piece of plastic wrap directly on the surface of the custard can prevent a skin from forming.
