    Combine the split pigeon peas, water, turmeric powder, and salt in a medium pot.

    Bring the mixture to a boil over medium-high heat, then reduce the heat to low and simmer, uncovered, for 25-30 minutes, or until the dal is tender and creamy.

    While the dal simmers, prepare the tarka by heating the vegetable oil in a small pan over medium heat.

    Add the mustard seeds and cumin seeds to the hot oil and let them splutter for about 30 seconds.

    Stir in the minced garlic, grated ginger, and green chili. Sauté for 1-2 minutes until fragrant and lightly browned.
