The method

Step by step

  1. 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

    About 1 min

  2. 2

Add the yellow onion and cook until softened, about 5-7 minutes.

    About 6 min

  3. 3

Stir in the garlic, curry powder, and turmeric. Cook for 1 minute until fragrant.

    About 1 min

  4. 4

Add the cubed potato, canned chopped tomato, vegetable broth, and bay leaf to the pot.

    About 2 min

  5. 5

Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes, or until the potatoes are tender.

    About 25 min

Cook’s note: Check occasionally to ensure there's enough liquid; add a splash more broth or water if needed.

  6. 6

Gently fold in the flaked smoked snoek.

    About 1 min

Cook’s note: Be careful not to break up the fish too much.

  7. 7

Continue to simmer for another 5-7 minutes, allowing the flavors to meld and the fish to heat through.

    About 6 min

  8. 8

Season with salt and black pepper to taste.

    About 1 min

Cook’s note: Smoked snoek can be salty, so taste before adding too much salt.

  9. 9

Remove the bay leaf before serving.

  10. 10

Garnish with fresh parsley, if desired, and serve warm.
