Equipment

The method

Step by step

  1. 1

Bring a large pot of water to a rolling boil.

    About 5 min

  2. 2

Add the soba noodles to the boiling water and cook according to package directions, typically 5-7 minutes, until al dente.

    About 7 min

Cook’s note: Avoid overcooking to prevent mushy noodles.

  3. 3

Drain the cooked noodles thoroughly and rinse them under cold water to stop the cooking process and remove excess starch. Set aside to cool completely.

  4. 4

While the noodles cool, prepare the dressing: In a small bowl, whisk together the toasted sesame oil, rice vinegar, soy sauce, maple syrup, and grated ginger until well combined.

    About 5 min

  5. 5

In a large mixing bowl, combine the julienned cucumber, julienned carrot, thinly sliced red bell pepper, and thinly sliced scallions.

    About 3 min

  6. 6

Add the cooled soba noodles to the bowl with the vegetables.

  7. 7

Pour the prepared dressing over the noodles and vegetables. Toss gently to ensure everything is evenly coated.

  8. 8

Cover the bowl and refrigerate the salad for at least 10 minutes to allow the flavors to meld.

    About 10 min

Cook’s note: Chilling improves the texture and flavor.

  9. 9

Serve cold, garnished with toasted sesame seeds.
