  • 120 mlsalsa
  • 75 gyellow onion, roughly chopped
  • 1 clovegarlic, peeled
  • 1 tspchili powder

  • 0.5 tspcrushed red pepper flakes
  • 0.25 tspsalt
  • 110 gshredded cheddar cheese

The method

Step by step

    Preheat your oven to 190°C (375°F).

    In a food processor, combine the drained pinto beans, softened cream cheese, salsa, chopped onion, garlic, chili powder, ground cumin, salt, and crushed red pepper flakes.

    Cook’s note: If you don't have a food processor, you can mash the beans with a potato masher in a large bowl and then stir in the other ingredients.

    Pulse the mixture until it is mostly smooth, but still has a little texture.

    Transfer the bean mixture into a small oven-safe baking dish and spread it into an even layer.

    Cook’s note: A 1-quart or 20cm (8-inch) round or square dish works well.

    Sprinkle the shredded cheddar cheese evenly over the top.

    Bake for 15-20 minutes, until the dip is heated through and the cheese is melted and bubbly.

    Cook’s note: You can switch to the broiler for the last minute to get the cheese nicely browned, but watch it carefully to prevent burning.
