The method

Step by step

    Crack the eggs into a bowl, add salt and black pepper, and whisk until well combined.

    In a separate small bowl, whisk together the soy sauce, rice vinegar, sesame oil, cornstarch, and water for the sauce.

    Heat half of the vegetable oil in a large skillet or wok over medium-high heat.

    Pour the egg mixture into the hot skillet and scramble, breaking it into large pieces, until just set but still soft, about 1-2 minutes.

    Add the remaining vegetable oil to the skillet.
