  • 2 tbspfresh parsley, chopped

The method

    Preheat your oven to 190°C (375°F).

    Arrange the bell pepper halves cut-side up in a 9x13 inch baking dish.

    Heat the olive oil in a large skillet over medium heat.

    Add the yellow onion and cook until softened, about 5 minutes.

    Stir in the garlic and cook for another minute until fragrant.

    Remove the skillet from the heat and add the cooked rice, canned diced tomato, tomato paste, vegetable broth, dried oregano, fresh parsley, salt, and black pepper.
