  • 120 gcanned crushed tomato
  • 45 mlolive oil
  • 1 tspsalt
  • 0.5 tspblack pepper

The method

Step by step

    Preheat your oven to 245°C (475°F).

    Finely chop the separated squid tentacles.

    In a mixing bowl, combine the chopped tentacles, onion, uncooked rice, mint, stuffing olive oil, tomato paste, crushed tomatoes, salt, and pepper.

    Mix all the stuffing ingredients thoroughly until well combined.

    Using a small spoon, fill each squid body about two-thirds full with the rice mixture.

    Cook’s note: Do not overfill the squid, as the rice needs room to expand while it cooks.

    Secure the opening of each squid with a toothpick to keep the stuffing inside.

    Arrange the stuffed squid in a single layer in a baking dish.

    Pour any leftover stuffing mixture around the squid, then drizzle with the baking olive oil and water.
