The method

Step by step

    If your dried meat is very hard, boil it in water for 10-15 minutes until slightly tender, then drain and pat dry. Skip this step if it's already pliable.

    Heat mustard oil in a large pan or wok over medium-high heat until it just begins to smoke. Reduce heat slightly.

    Add the dried meat pieces to the hot oil and stir-fry for 5-7 minutes until they are slightly crispy and browned.

    Remove the fried meat from the pan and set aside, leaving the oil in the pan.

    Add the yellow onion to the same pan and sauté for 3-4 minutes until softened and translucent.

    Stir in the garlic, ginger, and green chili. Cook for 1-2 minutes until fragrant.

    Add the chopped tomato and cook for 3-5 minutes, mashing it with your spoon, until it breaks down and forms a saucy consistency.
