The method

Step by step

  1. 1

Place the bulgur wheat in a medium bowl and cover with boiling water. Let it soak for 15-20 minutes, or until tender.

Cook’s note: Ensure the bulgur is fully hydrated and tender, but not mushy.

  2. 2

Once tender, drain any excess water from the bulgur wheat using a fine-mesh sieve and press out as much liquid as possible. Set aside.

    About 2 min

Cook’s note: Squeeze gently to prevent a watery salad.

  3. 3

In a large mixing bowl, combine the finely chopped parsley, diced tomato, diced cucumber, finely chopped mint, and minced red onion.

    About 5 min

  4. 4

Add the drained bulgur wheat to the bowl with the vegetables and herbs.

    About 1 min

  5. 5

Pour in the lemon juice and olive oil. Season with salt and black pepper.

Gently toss all ingredients together until well combined.

    About 1 min

Cook’s note: Use a large spoon or your hands for thorough mixing.

Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
