The method

Step by step

  1. 1

Heat a large pot or wok over medium heat.

    About 1 min

  2. 2

Add half of the coconut milk to the pot and bring to a gentle simmer. Stir in the green curry paste and cook for 3-5 minutes, stirring constantly, until fragrant and the paste has dissolved.

    About 5 min

Cook’s note: Cooking the curry paste with coconut milk helps to deepen its flavor.

  3. 3

Pour in the remaining coconut milk and vegetable broth. Bring the mixture to a simmer.

    About 3 min

  4. 4

Add the bell pepper, bamboo shoot, eggplant, and green beans to the simmering curry. Cook for 10-12 minutes, or until the vegetables are tender-crisp.

    About 12 min

Cook’s note: Adjust cooking time based on your preferred vegetable texture.

  5. 5

Stir in the lime juice, brown sugar, and soy sauce. Taste and adjust seasonings as needed.

    About 2 min

Cook’s note: Always taste and adjust to your preference – you might want more spice, sweetness, or tang.

  6. 6

Remove the curry from the heat and stir in the fresh basil and fresh cilantro.

    About 1 min

Cook’s note: Adding herbs at the end preserves their fresh flavor and color.

  7. 7

Serve the Thai green curry hot over cooked jasmine rice.
