Three-Ingredient Mandarin Orange Cake
An incredibly simple and moist cake made with just three main ingredients: a yellow cake mix, egg whites, and canned mandarin oranges. The fruit and its juice replace the need for any added oil or butter, resulting in a light, tender crumb with a bright citrus flavor.

Ingredients
- 432 gyellow cake mix
- 3 pcsegg white
- 624 gcanned mandarin orange segments in juice, undrained
- 1 gcooking spray
Equipment
baking pan · large bowl · spatula · wire rack · electric mixer · oven
The method
Step by step
- 1
Preheat your oven to 175°C (350°F) and lightly coat a 23x33 cm (9x13 inch) baking pan with cooking spray.
About 2 min
- 2
In a large mixing bowl, add the yellow cake mix, egg whites, and the undrained canned mandarin oranges.
About 1 min
Cook’s note: Pouring the wet ingredients in after the dry mix can sometimes make mixing easier.
- 3
Using an electric mixer on low speed, beat the ingredients for about 2 minutes until just combined. The batter will be lumpy from the orange segments, so do not overmix.
About 2 min
Cook’s note: If you don't have an electric mixer, a whisk will also work, but it will require more effort to break up the cake mix.
- 4
Pour the batter into the prepared baking pan and use a spatula to spread it into an even layer.
- 5
Bake for 30-35 minutes, or until a wooden skewer inserted into the center of the cake comes out clean.
About 35 min
- 6
Place the pan on a wire rack and let the cake cool for at least 15-30 minutes before cutting and serving.
Cook’s note: Letting the cake cool helps it set, making it easier to slice cleanly.
