Turon (Filipino Fried Banana Rolls)
Turon is a popular Filipino snack made from ripe saba bananas, often with a slice of jackfruit, rolled in a lumpia wrapper, and then fried until golden and crisp. The sugar caramelizes during frying, creating a delicious, crunchy coating. This vegan version uses plant-based wrappers and ensures all ingredients are animal-product free.

- 100 gjackfruit, fresh or canned in syrup, drained and sliced thinly(optional)
- 8 pcslumpia wrapper, vegan
- 0.25 cupbrown sugar
- 2 cupvegetable oil
Equipment
large frying pan · tongs · wire rack
The method
Step by step
- 1
Lay a lumpia wrapper on a clean, dry surface with one corner pointing towards you.
- 2
Place one or two slices of saba banana near the bottom corner of the wrapper.
- 3
If using, add a few thin strips of jackfruit on top of the banana slices.
- 4
Sprinkle about a tablespoon of brown sugar over the banana and jackfruit.
- 5
Fold the bottom corner of the wrapper over the filling, then fold in the side corners.
- 6
Roll the wrapper tightly upwards towards the remaining corner to form a compact log.
Cook’s note: You can dab the top corner with a little water to seal it if needed, though usually not necessary.
- 7
Repeat this process for the remaining bananas and wrappers.
About 5 min
- 8
Heat the vegetable oil in a large frying pan or wok over medium heat until hot, about 175°C (350°F).
About 3 min
Cook’s note: The oil should be hot enough to make the turon sizzle immediately when added.
- 9
Carefully place a few turon rolls into the hot oil, ensuring not to overcrowd the pan.
- 10
Fry for 2-3 minutes per side, or until golden brown and the sugar has caramelized, creating a crisp coating.
About 6 min
Cook’s note: Watch closely as the sugar can burn quickly.
- 11
Remove the fried turon from the oil and place them on a wire rack or a plate lined with paper towels to drain excess oil.
- 12
Serve immediately while warm and crispy.
