The method

Step by step

  1. 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

    About 1 min

  2. 2

Add the yellow onion, carrot, and celery stalk to the pot and cook, stirring occasionally, until softened, about 8-10 minutes.

    About 9 min

Cook’s note: This step builds the flavor base for the soup.

  3. 3

Stir in the garlic and cook for another minute until fragrant.

    About 1 min

Cook’s note: Be careful not to burn the garlic.

  4. 4

Add the canned diced tomato, vegetable broth, canned cannellini bean, dried oregano, dried thyme, and bay leaf to the pot.

    About 2 min

  5. 5

Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 20 minutes to allow the flavors to meld.

    About 20 min

  6. 6

Remove the bay leaf from the soup.

  7. 7

Stir in the fresh spinach and cook until wilted, about 2-3 minutes.

    About 2 min

  8. 8

Season the soup with salt and black pepper to taste.

Cook’s note: Adjust seasoning as needed.

  9. 9

Ladle the soup into bowls and garnish with fresh parsley, if desired.

Cook’s note: Serve hot with crusty bread.
