The method

    Combine the rinsed short grain rice, water, sliced fresh ginger, minced garlic, salt, and white pepper in a large pot.

    Bring the mixture to a boil over high heat, stirring occasionally to prevent the rice from sticking to the bottom.

    Once boiling, reduce the heat to low, cover the pot, and simmer for at least 60 minutes, or until the rice has broken down and the congee is thick and creamy.

    Cook’s note: Stir every 15-20 minutes to ensure even cooking and prevent sticking. If the congee becomes too thick, you can add a little more hot water.
