The method

Step by step

    Heat the olive oil in a large pot or Dutch oven over medium heat.

    Add the yellow onion and celery stalk to the pot and sauté until softened, about 5-7 minutes.

    Stir in the garlic and grated ginger, cooking for another minute until fragrant.

    Add the tomato paste, diced tomato, red lentil, chickpea, vegetable broth, turmeric, ground cumin, black pepper, and salt to the pot.
