The method

Step by step

    Rinse the basmati rice and moong dal together under cold running water until the water runs clear; set aside.

    Heat the vegan ghee in a large pot or pressure cooker over medium heat.

    Add the cumin seeds and let them splutter for about 30 seconds until fragrant.

    Stir in the grated ginger, green chili (if using), turmeric powder, and asafoetida.

    Add the rinsed basmati rice and moong dal to the pot and sauté for 2-3 minutes, stirring gently to coat with the spices.

    Pour in the water and add the salt; stir well to combine.

    Bring the mixture to a boil, then reduce the heat to low, cover the pot, and simmer for 20-25 minutes, or until the rice and lentils are tender and the water is absorbed.

    Cook’s note: If using a pressure cooker, cook for 2-3 whistles on medium heat, then let the pressure release naturally.
