The method

Heat the olive oil in a large Dutch oven or pot over medium-high heat.

Add the vegan sausage slices and cook until browned on all sides, about 5-7 minutes. Remove the sausages from the pot and set aside.

Add the yellow onion, carrot, and celery to the pot. Sauté for 5-7 minutes until the vegetables begin to soften.

Stir in the minced garlic and tomato paste. Cook for 1 minute until fragrant, stirring constantly.
