  • 4 cupvegetable broth
  • 2 cancanned cannellini bean, rinsed and drained
  • 2 tbsptomato paste
  • 1 tspdried thyme
  • 1 pcsbay leaf
  • 0.5 tspsalt
  • 0.25 tspblack pepper, freshly ground

  • 2 tbspfresh parsley, chopped

The method

Step by step

    Heat the olive oil in a large Dutch oven or pot over medium-high heat.

    Add the vegan sausage slices and cook until browned on all sides, about 5-7 minutes. Remove the sausages from the pot and set aside.

    Add the yellow onion, carrot, and celery to the pot. Sauté for 5-7 minutes until the vegetables begin to soften.

    Stir in the minced garlic and tomato paste. Cook for 1 minute until fragrant, stirring constantly.

    Pour in the canned diced tomatoes, vegetable broth, cannellini beans, dried thyme, and bay leaf. Season with salt and black pepper.

    Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 30 minutes, allowing the flavors to meld.
