- 1
Lay a spring roll wrapper flat on a clean surface with a corner pointing towards you.
- 2
Sprinkle a small amount of brown sugar in the center of the wrapper.
- 3
Place a few slices of plantain and a few strips of jackfruit (if using) on top of the sugar.
- 4
Fold the bottom corner of the wrapper over the filling, then fold in the side corners.

Roll the wrapper tightly upwards, sealing the top corner with a dab of water.
Cook’s note: Ensure the roll is tight to prevent oil from seeping in during frying.
- 6
Repeat the process with the remaining ingredients until all rolls are assembled.
About 5 min
- 7
Heat the vegetable oil in a deep pan or pot over medium heat until it reaches about 175°C (350°F).
About 3 min
Cook’s note: Use a deep-fry thermometer to monitor the oil temperature for best results.
- 8
Carefully place a few turon rolls into the hot oil, making sure not to overcrowd the pan.
- 9
Fry for 2-3 minutes on each side, or until golden brown and crispy.
About 5 min
Cook’s note: The sugar might caramelize and create a slightly crispy coating.
