Mise en place

Ingredients

Ingredients

  • 113 gunsalted butter

filling

  • 450 gcanned peach, in syrup, undrained

batter

  • 1 cupall-purpose flour
  • 1 cupgranulated sugar
  • 1 cupwhole milk
  • 2 tspbaking powder
  • 0.25 tspsalt

topping

  • 0.25 cupgranulated sugar
  • 0.5 tspground cinnamon(optional)

Equipment

saucepan · 8x8 inch baking dish · mixing bowl · oven · whisk

The method

Step by step

  1. 1

Preheat your oven to 200°C (400°F). Place the unsalted butter in an 8x8 inch (20cm) square baking dish and set the dish in the oven to melt as it preheats.

    About 5 min

  2. 2

While the oven heats, pour the canned peaches and their syrup into a small saucepan. Bring to a simmer over medium heat, then remove from the heat and set aside.

    About 5 min

  3. 3

In a medium bowl, whisk together the all-purpose flour, the granulated sugar for the batter, baking powder, and salt.

    About 1 min

  4. 4

Pour the milk into the dry ingredients and whisk until just combined into a smooth batter. A few small lumps are acceptable.

    About 1 min

  5. 5

Carefully remove the hot dish with melted butter from the oven. Pour the batter directly over the butter; do not stir.

    About 1 min

Cook’s note: The batter will sink in some places and rise around the butter, which creates the classic cobbler texture.

  6. 6

Spoon the warm peaches and syrup evenly over the batter. Do not stir.

    About 1 min

  7. 7

Combine the granulated sugar for the topping with the optional ground cinnamon, then sprinkle the mixture evenly over the peaches.

    About 1 min

  8. 8

Bake for 30-35 minutes, until the top is golden brown and a toothpick inserted into a cakey portion comes out clean.

    About 35 min

  9. 9

Let the cobbler cool on a wire rack for at least 10 minutes before serving.

    About 10 min

Cook’s note: This allows the cobbler to set slightly and makes it easier to serve.
