  • 3 pcslemon, juiced
  • 2 tbspdijon mustard
  • 4 clovegarlic, minced
  • 2 pcsbay leaf
  • 1 pcsscotch bonnet pepper, whole (optional for heat)(optional)
  • 3 tbsppeanut oil
  • 1 cupchicken broth
  • 0.5 cupgreen olive, pitted
  • 2 pcscarrot, peeled and sliced
  • 1 tspsalt
  • 0.5 tspblack pepper, freshly ground

The method

Step by step

    In a large bowl, combine the sliced yellow onions, lemon juice, Dijon mustard, minced garlic, bay leaves, salt, and black pepper. If using, add the whole Scotch bonnet pepper.

    Add the chicken thighs to the onion mixture, ensuring each piece is well coated. Cover the bowl and refrigerate to marinate for at least 2 hours, or preferably overnight.

    Remove the chicken from the marinade, reserving the marinade and onions. Pat the chicken dry with paper towels.

    Heat peanut oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.

    Sear the chicken thighs, skin-side down first, until golden brown and crispy, about 4-5 minutes per side. Remove the seared chicken from the pot and set aside.

    Reduce the heat to medium. Add the reserved marinated onions and bay leaves to the pot. Cook, stirring occasionally, until the onions are deeply caramelized and translucent, about 15-20 minutes.

    Pour in the chicken broth and bring to a simmer, stirring to deglaze the pot. Add the green olives and sliced carrots.

    Return the seared chicken thighs to the pot, nestling them into the onion mixture. If using the Scotch bonnet, ensure it's submerged.
