Prepare the beef by slicing it very thinly against the grain. If the beef is difficult to slice, place it in the freezer for 15-20 minutes to firm up.

Thinly slice the yellow onion.

In a medium skillet or shallow pot, combine the dashi stock, soy sauce, mirin, and sugar. Bring the mixture to a gentle simmer over medium heat.

Add the sliced onion to the simmering sauce and cook for about 3-5 minutes, until the onions soften.

Add the thinly sliced beef to the pot, spreading it out so it cooks evenly. Simmer for 3-5 minutes, or until the beef is cooked through and tender.
