  • 1 tspdry mustard powder
  • 2 tspworcestershire sauce
  • 4 pcsbacon, strips
  • 0.5 tspsalt
  • 0.25 tspblack pepper, freshly ground

Equipment

skillet · cutting board · knife · whisk · oven · large mixing bowl · baking dish

The method

Step by step

  1. 1

Preheat your oven to 175°C (350°F).

    About 10 min

Cook’s note: Position a rack in the middle of the oven for even baking.

  2. 2

In a medium skillet, melt the butter over medium heat.

    About 2 min

  3. 3

Add the chopped onion and green bell pepper and sauté for 5-7 minutes, until softened and fragrant.

    About 7 min

Cook’s note: Stir occasionally to prevent the vegetables from browning too much.

  4. 4

In a large mixing bowl, combine the brown sugar, ketchup, dry mustard powder, and Worcestershire sauce.

    About 1 min

  5. 5

Whisk the sauce ingredients until smooth.

    About 1 min

  6. 6

Add the sautéed vegetables, drained lima beans, salt, and black pepper to the bowl with the sauce.

    About 1 min

  7. 7

Gently stir everything together until the beans and vegetables are evenly coated.

    About 1 min

Cook’s note: Be careful not to mash the beans as you stir.

  8. 8

Pour the mixture into a 2-quart (or similar 20x20cm) baking dish and spread into an even layer.

    About 1 min

  9. 9

Lay the bacon strips in a single layer over the top of the bean mixture.

    About 1 min

Cook’s note: You can cut the bacon strips in half if they are too long for your dish.

  10. 10

Bake for 30-35 minutes, until the sauce is bubbly and the bacon is cooked through and crispy.

    About 30 min

Cook’s note: If you prefer extra-crispy bacon, you can place the dish under the broiler for 1-2 minutes at the end, watching it closely.

  11. 11

Carefully remove the dish from the oven and let it rest for 5 minutes before serving.

    About 5 min

Cook’s note: Resting allows the sauce to thicken slightly.
