- 2 tbspfresh oregano, finely chopped
- 2 clovegarlic, minced
- 3 tbspred wine vinegar
- 0.5 cupolive oil
- 0.5 tspred pepper flakes
- 0.5 tspsalt
- 0.25 tspblack pepper, freshly ground
Equipment
grill · tongs · cutting board · knife · small bowl
The method
Step by step
- 1
Prepare the chimichurri: In a small bowl, combine the fresh parsley, fresh oregano, garlic, red wine vinegar, olive oil, red pepper flakes, salt, and black pepper.
About 5 min
Cook’s note: Let the chimichurri sit for at least 10 minutes for the flavors to meld.
- 2
Preheat your grill to medium heat.
About 5 min
Cook’s note: Ensure the grill grates are clean to prevent sticking.
- 3
Place the chorizo sausages on the preheated grill.
- 4
Grill the chorizo for 15-20 minutes, turning occasionally, until cooked through and nicely browned.
About 20 min
Cook’s note: To check for doneness, you can make a small cut in the thickest part of a sausage; it should be firm and no longer pink.
- 5
During the last few minutes of grilling, lightly toast the cut sides of the crusty bread rolls on the grill.
About 2 min
Cook’s note: Watch the bread carefully to prevent burning.
- 6
Once cooked, remove the chorizo from the grill and slice each sausage lengthwise, but not all the way through, so it opens like a butterfly.
About 1 min
- 7
Place one butterflied chorizo into each toasted bread roll.
About 1 min
- 8
Spoon a generous amount of chimichurri over the chorizo.
About 1 min
Cook’s note: Adjust the amount of chimichurri to your taste.
- 9
Serve immediately and enjoy your Choripán.
Keep it good
Store leftover chimichurri in an airtight container in the refrigerator.
This dish is best enjoyed fresh; reheating is not recommended for the assembled sandwich.
