Choripán is a classic Argentinian street food, combining grilled chorizo sausage in a crusty bread roll. It's often served with a vibrant chimichurri sauce, adding a fresh, herbaceous kick to the rich sausage.

  • 0.5 cupfresh parsley, finely chopped
  • 2 tbspfresh oregano, finely chopped
  • 2 clovegarlic, minced

  • 0.5 cupolive oil
  • 0.5 tspred pepper flakes
  • 0.5 tspsalt
  • 0.25 tspblack pepper, freshly ground

The method

Step by step

    Prepare the chimichurri: In a small bowl, combine the fresh parsley, fresh oregano, garlic, red wine vinegar, olive oil, red pepper flakes, salt, and black pepper.

    Preheat your grill to medium heat.

    Place the chorizo sausages on the preheated grill.

    Grill the chorizo for 15-20 minutes, turning occasionally, until cooked through and nicely browned.

    Cook’s note: To check for doneness, you can make a small cut in the thickest part of a sausage; it should be firm and no longer pink.

    During the last few minutes of grilling, lightly toast the cut sides of the crusty bread rolls on the grill.

    Once cooked, remove the chorizo from the grill and slice each sausage lengthwise, but not all the way through, so it opens like a butterfly.
