  • 1 pcsyellow onion, small, thinly sliced
  • 2 clovegarlic, minced
  • 2 tspcurry powder
  • 400 gcanned whole peeled tomato, with juice
  • 0.5 tspsalt
  • 1 pinchblack pepper, freshly ground(optional)

garnish

  • 2 tbspfresh cilantro, chopped(optional)

Equipment

saucepan · spoon · cutting board · knife

The method

Step by step

  1. 1

Heat the vegetable oil in a medium saucepan over medium heat.

    About 1 min

  2. 2

Add the sliced yellow onion and sauté for 5-7 minutes, until softened and translucent.

    About 7 min

Cook’s note: Cook the onions slowly to develop their sweetness without browning them too much.

  3. 3

Stir in the minced garlic and curry powder, cooking for about 30 seconds until fragrant.

    About 1 min

Cook’s note: Toasting the spices briefly helps to release their aromatic oils.

  4. 4

Pour in the canned whole peeled tomatoes with all their juice. Use a spoon to gently break up the tomatoes in the pan.

    About 1 min

  5. 5

Season with salt and black pepper, then bring the mixture to a gentle boil.

    About 2 min

  6. 6

Reduce the heat to low, cover the saucepan, and let it simmer for 20 minutes, allowing the flavors to meld.

    About 20 min

Cook’s note: Stir occasionally to prevent the bottom from sticking.

  7. 7

Serve the curried tomatoes hot, garnished with fresh cilantro.

Cook’s note: This dish is excellent over basmati rice, with naan bread, or alongside grilled chicken or fish.
