The method

Step by step

    In a small bowl, dissolve the fresh yeast in the lukewarm milk and add a pinch of the granulated sugar. Let it sit for 10 minutes until foamy.

    In a large mixing bowl, combine the all-purpose flour, remaining granulated sugar, salt, lemon zest, and orange zest.

    Add the two large eggs and the yeast mixture to the flour mixture. Mix with a spoon or in a stand mixer with a dough hook until a shaggy dough forms.

    Add the softened butter, piece by piece, incorporating each addition before adding the next. Knead the dough for 10-15 minutes until it is smooth, elastic, and no longer sticky.

    Gently punch down the risen dough to release the air. Divide the dough into two equal portions. Shape each portion into a round or oval loaf.
