Equipment

saucepan · jar · stirring spoon

The method

Step by step

  1. 1

Combine the dried figs, dried apricots, dried pears, golden raisins, granulated sugar, water, lemon zest, and lemon juice in a medium saucepan.

    About 2 min

Cook’s note: Ensure all dried fruits are submerged in the liquid for even rehydration.

  2. 2

Bring the mixture to a gentle simmer over medium heat, stirring occasionally until the sugar dissolves.

    About 5 min

  3. 3

Reduce the heat to low, cover the saucepan, and simmer for 20-25 minutes, or until the fruits are plump and tender.

    About 25 min

Cook’s note: The liquid should have reduced to a syrupy consistency.

  4. 4

Remove the saucepan from the heat and stir in the mustard powder, apple cider vinegar, and salt.

    About 1 min

Cook’s note: Mix well to ensure the mustard powder is fully incorporated and no lumps remain.

  5. 5

Let the mostarda cool completely to room temperature, uncovered.

    About 1 hr

Cook’s note: Cooling slowly allows the flavors to meld and develop.

  6. 6

Once cooled, transfer the mostarda to a clean jar and refrigerate for at least 2 hours before serving to allow the flavors to deepen.

    About 2 hr

Cook’s note: The mostarda will thicken further as it chills.
