The method

Rinse the short grain rice thoroughly under cold water until the water runs clear, then drain well.

Prepare all the vegetables: finely dice the carrot, thinly slice the shiitake mushrooms, bamboo shoots, and konnyaku.

Cut the chicken thigh into small 1cm cubes.

In a medium pot or rice cooker pot, combine the dashi stock, soy sauce, mirin, sake, salt, and sugar.

Add the rinsed rice to the seasoning liquid in the pot and stir gently to combine.

Arrange the chicken, carrot, shiitake mushrooms, bamboo shoots, and konnyaku evenly over the rice. Do not stir.
