Ingredients

dough

  • 250 mlwarm water
  • 7 gactive dry yeast
  • 10 ggranulated sugar
  • 400 gall-purpose flour
  • 5 gsalt
  • 30 mlvegetable oil

garlic sauce

  • 4 clovegarlic, finely minced
  • 15 gfresh parsley, finely chopped
  • 30 mlvegetable oil
  • 1 pinchsalt

Equipment

kitchen scale · pastry brush · measuring cups · plastic wrap · large bowl · measuring spoons · small bowl · baking dish

The method

Step by step

  1. 1

In a large bowl, combine the warm water, active dry yeast, and granulated sugar. Let it sit for 5-10 minutes until foamy, indicating the yeast is active.

    About 10 min

Cook’s note: Ensure your water is warm, not hot, to avoid killing the yeast.

  2. 2

Add the all-purpose flour, salt, and vegetable oil to the yeast mixture. Mix with a spoon until a shaggy dough forms.

    About 2 min

  3. 3

Transfer the dough to a lightly floured surface and knead for 8-10 minutes until it becomes smooth and elastic.

    About 10 min

Cook’s note: If the dough is too sticky, add a little more flour, one tablespoon at a time.

  4. 4

Place the kneaded dough into a lightly oiled bowl, turning it once to coat. Cover the bowl with plastic wrap or a clean kitchen towel and let it rise in a warm place for 60-75 minutes, or until doubled in size.

    About 1 hr 15 min

Cook’s note: A warm oven (turned off) with the light on can create a perfect rising environment.

  5. 5

Once risen, gently punch down the dough to release the air. Divide the dough into 8-10 equal pieces.

    About 2 min

Cook’s note: Using a kitchen scale can help ensure even-sized pampushky.

  6. 6

Shape each piece into a small, round bun. Arrange the buns in a lightly oiled 9-inch round baking dish or an 8x8-inch square pan, leaving a little space between them.

    About 5 min

Cook’s note: Ensure the buns are somewhat close so they rise and bake into each other, creating soft sides.

  7. 7

Cover the pan again and let the pampushky rise for another 20-30 minutes, or until noticeably puffy.

    About 30 min

  8. 8

Preheat your oven to 190°C (375°F) while the pampushky are on their second rise.

    About 15 min

  9. 9

Bake the pampushky for 18-22 minutes, or until golden brown on top and cooked through.

    About 22 min

Cook’s note: The internal temperature should reach 93-96°C (200-205°F) when fully baked.

  10. 10

While the pampushky are baking, prepare the garlic sauce. In a small bowl, combine the minced garlic, chopped fresh parsley, vegetable oil, and salt.

    About 5 min

  11. 11

Once the pampushky are out of the oven, immediately brush the prepared garlic sauce generously over the warm buns.

    About 1 min

Cook’s note: Brushing while hot allows the buns to absorb the garlic flavor better.

  12. 12

Serve the pampushky warm and enjoy.
