  • 1 pcsyellow onion, medium, thinly sliced
  • 3 clovegarlic, thinly sliced
  • 1 pcsgreen bell pepper, large, deseeded and thinly sliced
  • 1 pcsred bell pepper, large, deseeded and thinly sliced
  • 4 pcstomato, medium, roughly chopped
  • 1 tsppiment d'espelette
  • 2 pcsthyme, fresh sprigs
  • 1 tspsalt
  • 0.5 tspblack pepper, freshly ground

garnish

  • 2 tbspflat-leaf parsley, fresh, chopped(optional)

The method

Step by step

    Heat the olive oil in a large skillet or sauté pan over medium heat.

    Add the sliced onion and cook for about 5 minutes, stirring occasionally, until softened.

    Stir in the sliced garlic and cook for one minute more until fragrant.

    Cook’s note: Be careful not to let the garlic burn, as it can become bitter.

    Add the sliced green and red bell peppers to the skillet. Continue to cook for 8-10 minutes until they have softened.

    Stir in the chopped tomatoes, piment d'Espelette, thyme sprigs, salt, and black pepper.

    Cook’s note: If you can't find piment d'Espelette, a pinch of cayenne pepper mixed with sweet paprika is a good substitute.

    Bring the mixture to a gentle simmer.

    Reduce the heat to low, cover the skillet, and let it cook for 15 minutes until the vegetables are very tender and the sauce has thickened.

    Remove and discard the thyme sprigs before serving.
