The method

Step by step

    Prepare the sauce ingredients: finely chop the shallot, mince the garlic, and grate the ginger.

    In a small bowl, combine the black bean paste and sweet bean paste. In another small bowl, whisk together the water and cornstarch to create a slurry.

    Heat the vegetable oil in a large wok or skillet over medium-high heat. Add the ground pork and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess fat.
