Asure, also known as Noah's Pudding, is a traditional Turkish dessert made from a variety of grains, legumes, dried fruits, and nuts. It is a hearty and sweet pudding often prepared and shared during special occasions. This vegan version is naturally dairy-free and full of wholesome ingredients.

  • 250 gwheat berries, soaked overnight
  • 100 gchickpea, soaked overnight, cooked
  • 100 gwhite bean, soaked overnight, cooked
  • 50 grice, rinsed
  • 100 gdried fig, chopped
  • 100 gdried apricot, chopped
  • 50 ggolden raisin
  • 200 gsugar
  • 2 tbsprose water(optional)
  • 1 tsporange zest
  • 2 lwater

  • 1 tspcinnamon, ground
  • 0.5 cuppomegranate seed
  • 50 gwalnut, chopped
  • 50 gpistachio, chopped(optional)

The method

Step by step

    Place the wheat berries in a large pot with enough water to cover by several inches.

    Cook’s note: Soaking the wheat berries overnight significantly reduces cooking time.

    Bring the wheat berries to a boil, then reduce heat and simmer for 15 minutes.

    Turn off the heat, cover the pot, and let the wheat berries rest for at least 1 hour, or preferably overnight.

    Cook’s note: This resting period allows the wheat berries to fully absorb water and soften.

    Drain and rinse the cooked chickpeas and white beans.

    Cook’s note: If using canned beans, rinse them thoroughly to remove excess salt.

    Add the rinsed rice, cooked chickpeas, and white beans to the pot with the wheat berries.

    Pour in the water and bring the mixture to a boil over medium-high heat.

    Reduce the heat to low, cover, and simmer for 30-40 minutes, stirring occasionally to prevent sticking, until the rice is cooked and the mixture thickens slightly.

    Stir in the chopped dried figs, dried apricots, golden raisins, sugar, and orange zest.

    Continue to simmer for another 15-20 minutes, stirring frequently, until the fruits are plump and the pudding reaches a thick, creamy consistency.

    Remove from heat and stir in the rose water, if using.
