The method
Step by step
- 1
Heat the vegetable oil in a large pot or Dutch oven over medium heat.
About 1 min
- 2
Add the yellow onion and cook until softened and translucent, about 5-7 minutes.
About 6 min
- 3
Stir in the garlic, sweet paprika, and caraway seed; cook for another minute until fragrant.
About 1 min
Cook’s note: Be careful not to burn the paprika, as it can become bitter.
- 4
Add the tomato paste and cook for 2 minutes, stirring constantly, to deepen its flavor.
About 2 min
- 5
Pour in the chicken broth and bring the mixture to a simmer.
About 3 min
- 6
Add the potato and sauerkraut to the pot.
About 1 min
- 7
Reduce the heat to low, cover, and simmer for 15-20 minutes, or until the potatoes are tender.
About 18 min
- 8
Stir in the frankfurter and continue to simmer for 5 minutes, allowing them to heat through.
About 5 min
- 9
Remove the pot from the heat and stir in the sour cream until well combined.

Cook’s note: Adding sour cream off the heat prevents it from curdling.
- 10
Season with salt and black pepper to taste.
Cook’s note: Taste and adjust seasonings as needed.

Ladle the soup into bowls and garnish with fresh parsley, if desired.
