The method

Step by step

    Pat the chicken thighs dry with paper towels and season generously with salt and black pepper.

    Heat the olive oil in a large pot or Dutch oven over medium-high heat.

    Sear the chicken thighs skin-side down for 5-7 minutes until the skin is golden brown and crispy.

    Remove the chicken from the pot and set aside, leaving the rendered fat in the pot.

    Add the chopped yellow onion to the pot and sauté for 5-7 minutes until softened and translucent.

    Cook’s note: Scrape up any browned bits from the bottom of the pot with a wooden spoon.

    Stir in the ground cumin, ground coriander, ground cinnamon, and ground allspice, cooking for 30 seconds to toast the spices.
