Equipment

The method
Step by step
- 1
Heat the olive oil in a large pot or Dutch oven over medium-high heat.
About 1 min
- 2
Add the ground turkey and cook, breaking it apart with a spoon, until it is fully browned.
About 7 min
Cook’s note: Don't overcrowd the pan, as this will steam the meat instead of browning it.
- 3
Add the chopped onion and green bell pepper to the pot with the turkey.
About 1 min
- 4
Sauté for about 5-7 minutes, stirring occasionally, until the vegetables have softened.
About 7 min
- 5
Stir in the minced garlic and sliced mushrooms. Cook for another 3 minutes until the garlic is fragrant.
About 3 min
Cook’s note: Be careful not to burn the garlic, which can make the sauce taste bitter.
- 6
Pour in the crushed tomatoes, tomato passata, and water.
About 1 min
- 7
Add the salt, granulated sugar, dried oregano, dried basil, dried thyme, and the bay leaf.
About 1 min
Cook’s note: The sugar helps to balance the acidity of the tomatoes.
- 8
Stir everything together well and bring the sauce to a gentle simmer.
About 4 min
- 9
Reduce the heat to low, cover the pot, and let the sauce simmer for at least 60 minutes.
About 1 hr
Cook’s note: Stir every 15 minutes or so to prevent the sauce from sticking to the bottom of the pot.
- 10
Remove and discard the bay leaf before serving the sauce.
