The method
Step by step
- 1
Preheat your oven to 200°C (400°F).
About 5 min
- 2
Scrub the potatoes thoroughly under cool running water and pat them completely dry.
About 3 min
Cook’s note: Drying the potatoes helps the butter mixture adhere better.
- 3
Place one potato at a time on a cutting board and slice it lengthwise into 3 or 4 thick, even planks.
About 3 min
Cook’s note: Try to keep the slices from each potato together so they are easy to reassemble.
- 4
In a small bowl, melt the butter in the microwave or a small saucepan.
About 1 min
- 5
Stir the dry onion soup mix into the melted butter until it's well combined.
About 1 min
- 6
Using a pastry brush, coat both sides of each potato slice with the butter and onion mixture.
About 2 min
- 7
Reassemble each potato by stacking its seasoned slices back into the original potato shape.
About 1 min
- 8
Wrap each reassembled potato tightly in a piece of aluminum foil.
About 2 min
Cook’s note: A tight wrap helps steam the potato from the inside, making it tender.
- 9
Place the foil-wrapped potatoes directly on an oven rack and bake for 60 minutes, or until tender when pierced with a fork.
About 1 hr
- 10
Carefully remove the potatoes from the oven and let them rest for 5 minutes before unwrapping, as hot steam will be released.
