Ingredients

Measurements

Converted for display; the recipe amounts stay equivalent.

  • 12 cuppopped popcorn, plain, unsalted
  • 0.75 cupbrown sugar, packed
  • 0.33 cuphoney
  • 2 tbspunsalted butter
  • 1 pinchsalt
  • 1 tspvanilla extract(optional)

Equipment

saucepan · measuring cups · large bowl · spatula · baking sheet · parchment paper · measuring spoons

The method

Step by step

  1. 1

Place the popped popcorn in a very large bowl and line a baking sheet with parchment paper.

    About 2 min

Cook’s note: Ensure the bowl is large enough to allow for easy mixing without spilling.

  2. 2

In a medium saucepan, combine the brown sugar, honey, unsalted butter, and salt.

    About 1 min

  3. 3

Cook over medium heat, stirring frequently, until the butter is fully melted and the sugar has dissolved.

    About 3 min

  4. 4

Increase the heat slightly to bring the mixture to a boil, then let it bubble for one minute without stirring.

    About 1 min

Cook’s note: Boiling the syrup helps it reach the right temperature to harden properly when cooled.

  5. 5

Remove the pan from the heat and carefully stir in the vanilla extract, if you are using it.

  6. 6

Immediately pour the hot syrup mixture evenly over the popcorn.

    About 1 min

Cook’s note: The syrup is extremely hot, so pour carefully and avoid touching it with your skin.

  7. 7

Use a greased spatula or two spoons to gently toss the popcorn until it is evenly coated in the syrup.

    About 2 min

Cook’s note: Work quickly, as the syrup will begin to set as it cools.

  8. 8

Lightly grease your hands with butter or oil, then scoop portions of the mixture and gently press them into firm balls.

    About 5 min

Cook’s note: Don't press too hard, or the popcorn balls will be dense instead of light and crispy.

  9. 9

Place the finished balls on the prepared baking sheet and let them cool completely for about 20 minutes until firm.

    About 20 min
