The method

Place the salt pork cubes in a small saucepan, cover with water, and bring to a boil. Boil for 5 minutes to remove excess salt, then drain and set aside.

In a large pot or Dutch oven, combine the drained soaked beans, the boiled salt pork, chopped onion, bell pepper, celery, and minced garlic.

Pour in the water and add the first portion of Italian seasoning, the whole hot pepper, and the bay leaf. Stir everything together.
