Stabilisers (E-numbers)
Stabilisers keep a food's physical state uniform and stop it separating. They overlap with thickeners and gelling agents and include many gums and celluloses.

Questions about stabilisers
- What are stabilisers?
- Stabilisers are food additives that act as stabiliser — keeps a food's physical state uniform and stops it separating. In the EU they are identified by E-numbers and approved under Regulation (EC) No 1333/2008.
- Which E-numbers are stabilisers?
- Forkin tracks 22 stabilisers — for example Protease (E1101), Invertase (E1103), Polyvinylpolypyrrolidone (E1202), Ammonium phosphate (E342). The full list with each one's regulatory level is on this page.
- Are stabilisers vegan?
- It depends on the individual additive and its source — many can be produced from plant, mineral or animal-derived raw materials, and the label rarely says which. The Forkin app shows verified vegan and vegetarian status per product.
