The method

Step by step

    Heat vegetable oil in a large non-stick pan or wok over medium-high heat.

    Add the diced tofu and cook until golden brown and slightly crispy, about 3-5 minutes. Remove from the pan and set aside.

    Add the yellow onion to the same pan and sauté for 2-3 minutes until softened.

    Stir in the garlic and chopped kimchi, cooking for another 2-3 minutes until fragrant and the kimchi is slightly cooked down.

    Push the ingredients to one side of the pan, then add the cooked rice to the empty side. Break up any clumps with your spatula.

    Cook’s note: Cold, day-old rice works best for fried rice as it's less sticky.

    Mix all ingredients thoroughly, ensuring the sauce is evenly distributed and the rice is coated. Continue cooking for 3-5 minutes, allowing the rice to get slightly crispy.
